Want Cornbread In a Hurry?

You can start with Jiffy Cornbread Mix for a quicker bread.
This recipe is my son Soji's. He substitudes the Jiffy Mix for cornmeal and flour.
3 boxes Jiffy Mix
1 3/4 C Milk
1/2 tsp Vanilla
1 tsp Baking Powder
1/3 C Margarine
1 or 2 Tbs Sugar (to taste)
1/4 tsp Nutmeg
Preheat oven to 350 degrees. Grease and flour one 13x9 inch pan or two 8 or 9-inch pans.
Mix milk, eggs, vanilla and margarine in mixing bowl. Beat on low for 1 minute.
Add Jiffy Mix, baking powder, sugar and nutmeg. Mix on high speed, scraping bowl frequently, for three minute.
Pour into pans. Bake for 40-45 minutes in a 13x9 inch or 30-35 minutes in 8 or 9 inch pans.
Bread is ready when a wooden toothpick stuck in the center comes out clean.
If you prefer, you can make muffins. Use paper muffin paper inserts in your muffin pans or grease and flour the muffin pan and bake the batter directly in the muffin pan. Bake for 15 to 20 minutes or until wooden toothpick stuck in the center comes out clean.
