Fried Eggplant with Chicken, Beef, and Shrimp
I think eggplant is one of those vegetables that are really good for you but does not necessarily taste too good.
Of course, that depends on whether you like it or not.
For those who do like it, here's a recipe that may become one of your favorites.
Here's what you will need:
2 eggplants (peeled, cut up, and seeds removed)
1 lb peeled shrimp
3 lbs chicken and beef
1 C smoked turkey
1 medium onion (chopped)
1 1/2 tsp salt
2 tsp seasoned salt (Lawrys is great)
1/4 tsp ground black pepper
1/4 tsp baking soda
1 C cooking oil
3 cook spoons oil
1/4 C water
1 pod hot pepper (optional)
First, we have to cook the chicken, beef, and shrimp.
Cut your chicken into 1 1/2 inch pieces. Cut stewing beef into 1 inch pieces. Peel shrimp.
Combine and add 1 tsp salt and 1 tsp seasoned salt. Stir to spread seasoning evenly. Separate shrimp from beef and chicken.
Add 3 cook spoons of cooking oil to a large skillet. Heat oil on medium high.
When oil is hot, fry chicken until both sides are golden brown. Remove from oil.
Next, fry shrimp until golden brown.
Reduce heat to medium and sautee beef until cooked.
Now, to make your sauce.
Remove the purple peeling and cut up into small 1/2 inch squares. Place in a pan of water and squeeze with you hands. Keep squeezing until you have removed most of the seeds.
Use a strainer to separate the pieces from the water and seeds.
Cut turkey in small 1/2 inch pieces. Set aside.
Heat 1 cup of oil in a large skillet on medium high heat. Add eggplant to hot oil. Add baking soda and fry, stirring frequently.
Continue to fry until mashed up, well done and brown, about 25 to 30 minutes. Add chopped onions and smoked turkey and continue frying, stirring for 10 more minutes on medium high.
Add water, cooked chicken, beef, and shrimp. Reduce heat to medium low and simmer for about 10-15 more minutes.
Serve with rice. and hot pepper.

Use a healthy oil like canola or olive
To cook rice, simply follow the directions on the rice container.
A rice cooker is a good investment. It does not cost a lot and is well worth the money. All you have to do is measure your rice and water according to the directions for cooking. You will have perfectly cooked rice every time.
