White Sweet Potato Fries

White sweet potato fries make a nice appetizer and side dish.

You will probably have to make a trip to the Oriental or Spanish store to find them. Read about the different
varieties of African sweet potatoes.

When you do go shopping for your sweet potatoes, remove a small piece of skin and check out the color on the inside. It should be white. Sometimes you think they are and they are not.

You will need:

Several sweet potatoes
1/2 to 1 C of cooking oil

Peel using a small sharp knife. Cut into ΒΌ inch slices.

Place oil in a wide sauce pan and heat on medium high. Carefully place slices in the
hot oil with a cooking fork. Adjust the heat if necessary so that the potatoes do not get too dark or cook too fast.

Fry until golden brown. Flip and fry the other side.

When done, place on a plate lined with paper towels. The towels will absorb the excess oil. Then transfer to another plate or platter for serving. Add salt to taste. Serve as an appetizer, a snack or side dish.


You may also like fried cassava or fried plantain.


You can use the orange ones but they taste a little different. The texture is not the same either.
